Is there a way to be a voyeur & just watch? Not sure I'll have the time to commit to a full session.

I’m not sure Etranger. Possibly. It depends on the uptake. If there are four players per game, I’d be concerned about the bandwidth effect of adding additional users - I don’t want to diminish the experience of the players. If there are less, it’s a possibility.
