'Probably....' They should wear field gray versions of the panzer crew uniform, or the reed green fatigues, or sometimes cammo uniforms. At least some of 21st Panzer's panzerjager or StuG crews wore a distinctly home made looking cammo Tabard.

I've also seen a photo of a crewed up StuG with everyone in Field gray, except for the driver, who's either a Goth or panzer crew, dressed in black.

Panzerjager crews could wear either/or grey or black panzer uniforms, though the same was true of panzer crews, to be honest. There are photos of crews standing for inspection wearing a mix of black and grey. Artillery-StuG crews would wear just grey. As has been said, various camo items could be worn over the top and SS crews might alternatively have complete suits of camo material.

Not forgetting the late war reversible white/grey parka. Though it wouldn't stay white for long in an AFV.

Did I mention there were also panzer crew 'onesies' in Reed Green?

Reed Green is a sort of greenish-grey, whereas Field Grey is a sort of greyish-green.

Obvs.
