If I define a project as "I've completed everything I have for it and have no intention of ever doing more work on them or getting any more. " there are very few that I could class as completed.
If doing enough to play with is good enough them I've done a few more.
Lots of unfinished ones which must now be my goal.
I know when to go out
I know when to stay in
Get things done

It will have a defined project plan for delivery, formal change and configuration management processes, a sensible* risk register and a clear statement of which 2 of the 3 major outcomes (cost, quality, timescale) are critical to the result.

Unless the word ‘project’ is preceded by the word ‘wargame’ in which case the definition is ‘oh, shiny’.

*do you hear that Keith? sensible that’s the key word.
Aaaah. Takes me back to my working days........

......anyway......yes, all of the above, but also a project is.......'oooh shiny, must have some, a lot, lots more.....'

Projects you’ve completed in your lifetime...

28mm Fishguard 1797 - every last unit, figure and character DONE. I might eventually expand into 28mm Revolutionary Wars, but I'm not feeling the urge just at the moment.

15mm Samurai - I've got a large Uesugi army that includes all the known clans under that banner. It will never be expanded.

28mm AWI - I've got enough stuff to do the largest battles of the period at 1:20, so I doubt I'll buy any more.

Projects you’ve started...

28mm Late Roman/Arthurian - Not touched this for a while, but still got stacks to paint. A decent set of rules might bring me back to it.

28mm Marlburian - Mainly started because I loved the Front Rank figures and wanted to paint them. Will probably abandon.

15mm SYW - I've got large Prussian, Austrian, Swedish and Reichsarmee armies, but haven't touched them in a very long time. Fully intend to play again, as I love the period.

15mm Napoleonics - 10,000 figures later, I've still got a fair way to go before I've 'done' the Napoleonic Wars... I've finished the Swedes (corps for 1813), the Austrians (four corps for 1809), the Dutch-Belgians, Brunswickers and most of the French allied states and I've pretty much done the British (everything needed for the Penisnular War and 1815, bar one unit of heavy dragoons in 'late' uniform, one unit of foot in late uniform and the 52nd Lt Inf) and the Portuguese (three infantry regiments needed for Vittoria). The Prussians will be finished by the summer (3 corps) and the French will be finished off by the end of the year. Then I've got the Russians to finish and the Spanish to do, which should be finished by the end of 2019. Then I'd like to do an 1806 Prussian army.

15mm WW2 - I've got stacks and stacks and stacks, but still stacks left to paint.

6mm WW2 Dogfighting - Got lots of hairyplanes for the Battle of Britain, early Burma and Dutch East Indies campaigns. This might count as 'complete', as I don't plan on getting any more, but we'll see.

15mm Cold War - Still building up the forces, though have managed to do a few games.

28mm AVBCW - Still building up the forces and love the silliness.

28mm Sci-Fi - More Bug-Hunt and Traveller than WH40K. Not touched it in a very long time, but will probably come back to it.

6mm X-Wing - Love it!

Projects you’ve abandoned...

6mm WW2 - I had a large German army during the 1980s (my very first 'proper' post-Airfix wargames army) and ditched it during the 90s.

6mm Cold War - I've still got large quantities of these and it could classify as a completed project, but they've lain forlorn and untouched since the 90s. Should have binned years ago.

15mm ACW - I still like the period, but the Only Other Gamer in the Village was a twat. Sold them to him for a very large mark-up so he could go and play with himself. Will probably do it again one day, as I really like Fire & Fury as a game.

10mm Franco-Prussian - bought a couple of small armies, painted precisely one unit for each army and then got rid.

15mm Ancients - I've got a very large and very nice Seleukid army, along with odds and sods of Egyptians and Dark Ages, but I totally lost interest in Ancients many years ago. Already got rid of a large Republican Roman army.

20mm Spanish Civil War - Not touched since the 90s. Will probably bin at some point.

Teeny-Tiny Scale WW1 Naval - We really enjoyed this (Featherstone rules, with matchsticks for torpedoes) but some bastard stole my navy...

28mm WH40K - Had a load of fist-generation plastic space-wombles, imperial guard, metal space-orcs, space-dwarves, space-elves and space-frogs, but gave it all away.

Projects you WILL do...

15mm ACW, as mentioned above... Or maybe 10mm...

One day, probably quite soon, the head of the Royal Navy is going to say something very similar.
Kein Plan überlebt den ersten Kontakt mit den Würfeln. (No plan survives the first contact with the dice.)
