Did Indian (ie Sepoy) regiments of this period have a light company, as well as grenadiers? If not, what did they do for skirmishers?

Apparently not, they had two companies of Grenadiers according to Grant. I painted four figures to represent those. I'm surmising skirmishing not really a feature of the early C19th wars in India. The European regiments of the EIC had a Light and a Grenadier company, as did HM Regular battalions.
