This explains it rather nicely = go to 3:30 for the relevant bit (Napoleonic), but the whole thing is worth watching. A British crew would have the guy with the rammer and the guy loading the round into the barrel on the opposite sides of the barrel from the French, and they would also "hide" in between the barrel and the wheel whilst the gun is being fired.
