Castles maybe not, but town walls I think show some examples, ie York:

York is interesting in that at some places the external wall is barely taller than me standing with my arms outstretched - albeit on a good sized embankment but I still reckon I could climb it.
Or Southampton:

From memory La Rochelle had a similar set-up.
There is also the human reaction to taxes for the common good “you want them ‘ow tall?! Beggone varlet, I’m not paying for that!”
Besides, it would cost £17 per wall section to double the height and it’s been an expensive year so far!

I think it looks good for town walls.
The York walls are also (mostly) on a grassy bank. You could always make a set of detachable banks for those occasions when you want more elevation.

I was told that the banked earth against the walls at York was a post medieval measure to increase resistance to cannon fire but it is still a good way of increasing the height.
Of course there could be more of the stuff out there. The recent sale on Flea bay may bring some more out?

Wasn't it because of the lack of available elevation for Medieval Artillery and a earth bank being much more resistant to canon fire?
Berwick Town walls are on a bank too IIRC

Is that post-decimal, or at ye olde mediaeval prices? Time to start thrashing those varlets a little more soundly, methinks*!
(* I know, I know - I hate that word, but it just seemed right here. )

Thinking I'm going to purchase this file set as I'm not seeing anything off the shelf that I fancy.

That looks nice and I think the slight roughness to 3d print surfaces actually suits these buildings.
I was very tempted by this lot:

But at the moment I’m sorted for buildings and walls.

They look very nice but my little printer doesn't have a big enough bed to do those buildings, unless I sliced them down to sections. Plus it would probably cost a fortune in resin

I've had a bit of a think on wall height and I think I'll stick with what I've got - the embankment approach is useful but I'm aiming at a mainly pre-big artillery period and it does present some expensive problems with the gatehouse.
Besides, I may have mislead you with the idea that those were the castle walls. Oh no, those were the
curtain walls. Here's the castle walls:
